40% Corvina, 30% Corvinone, 30% Rondinella, 5% Molinara
Vineyards
These grapes come from the classic historical area around the ancient village of Negrar. Historically the vineyards were planed with a mixture of grape varieties, and our Amarone is made from the hand-picked grapes which are then packed into small wooden crates and dried over winter.
Vintage 2007 had a regular pace, rain did not interfere with the health of the grapes. A careful selection of the grapes on the high hills proved to be once again a good choice, the grapes were perfectly ripe. In the lower vineyards the grapes were hand picked with very careful selection.
Vinification
The dried grapes are macerated for 30 days at the beginning of February at around 14°-15° C and the soft pressing yield a mere 36% of must. The alcoholic fermentation is much warmer and lasts for a further 30 days. This is followed by three years of ageing including 12 months maturation in traditional chestnut barrels.
